Shortbread Cookies with Jam Recipe
Ingredients:
- 320g plain white flour
- ½ teaspoon salt
- 1 tablespoon vanilla extract
- 50g jam
- 200g unsalted butter
- 2 egg yolks
- 200g caster sugar
Instructions:
- Add butter, caster sugar, salt and vanilla extract into a bowl and mix.
- Add flour and mix.
- Add egg yolks and mix.
- Prepare baking tray lined with baking paper.
- Roll the dough into small balls (1 teaspoon each) and place onto baking tray.
- Gently press the centre of each ball of dough to create a hollow in the centre.
- Fill the hollow of each ball of dough with ¼ teaspoon of jam.
- Pre-heat the oven to 180⁰C. Bake in the oven for 12 minutes until very lightly coloured.
- Transfer cookies onto wire rack to cool completely.
